Menu Plan Monday!
Monday: Baked Penne with Chicken, Broccoli, and Smoked Mozzerella
This.looks.delicious. I’ll be using the free pasta from Target, cheap chicken from Randalls, and very cheap bag of broccoli that I found at the back of the pantry. This was delicious. The smoked mozzerella is slightly more pricey than some of my ingredients, but so worth it. The whole family loved it. I doubled the recipe, and there was just enough for one of us to have for lunch today. OMG, if you like pasta, you need to try this. Trust me.
Gravy steaks, mashed potatoes, canned corn, yeast rolls. I got packages of gravy steak from Randalls for about .15-.50 ea. My favorite kind of meat – CHEAP! Mashed potatoes were free with coupons last fall, and canned goods are on sale at Kroger. Yeast rolls were about $1 from HEB, and I can’t make them at home for that cheap. Total for this meal will be well under $3. Actual cost: $1.30 for the meat(used 3 packages), $.25 for the mashed potatoes (milk), $.64 for 2 cans of corn, and $.50 for the rolls (1/2 package) = $2.69
Jordan’s 11th Birthday. Birthday girl choice, plus cake. We had Fuddrucker’s. They have a 4 for $20 that works pretty well.
Leftover/Breakfast for Dinner night
May attempt homemade pizza. I’m going to have a store bought crust on standby. We snacked all evening and no one wanted a proper dinner.
Possible family dinner. If not, an attempt at TGI Friday’s Sizzling Parmesan Chicken. We had pizza here. No one was overly impressed, but my DH liked the Boar’s Head pepperoni I picked up. Total cost? About $12 for 4 individualized pizzas.
Valentine’s Dinner with my love, minus kids. We ate at TGI Fridays with friends and one of my brothers to play Trivia with Houston Trivia League.
