Monday: Leftover grilled pork chops, potato salad and corn on the cob. Very very tasty and pretty reasonably priced. I spent $2.50 on making 5 lbs of potato salad, and it was enough for 2 meals plus seconds, times 3. Follow that math. Pork chops came from a loin I bought at Kroger for $1.99/lb. I used 2 lbs, so $4 there. And corn was either 6 or 8 for $1. So, dinner cost about $6.25.
Tuesday: Either Taco Tuesday or an enchilada casserole. I’ll be surfing Pinterest today.
Wednesday: Easy chicken cordon bleu. I like Mel’s recipe here. Serving it with rice pilaf.
Thursday: Pulled pork in the slow cooker and chips. Somehow I forgot to make this. Could be because I threw the loin back into the freezer. Whoops!
Friday: Take two on parmesan crusted tilapia. The first time I made it, it was not what I had in mind. Going to serve it with broccoli and rice.
Saturday: Fend for yourself/pizza/leftovers
Sunday: Grilling day!
